Proscuitto Wraps

Ingredients

  • 6 slices DI LUSSO® Prosciutto Ham
  • 3/4 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup red pepper, finely chopped
  • 1/8 cup green onion, finely chopped
  • 1 tablespoon mixed fresh herbs, chopped (thyme, basil, tarragon)
  • 1/2 teaspoon mustard seed, whole or ground
  • 1 teaspoon pickle juice

Directions:
Combine and mix all ingredients. Fill pastry bag, use #9 or #12 plain or star tip. Squeeze line of filling down center of proscuitto slice, starting about 1 1/4 inch away from left edge, ending about 1/4 inch from right edge. Fold up left edge about l 1/4 inch. Then fold bottom edge and top edge length into center to cover filling, leaving one edge open like flute to show filling. Serve with green grapes and garnish of fresh sage. Recommended sauces to serve with these wraps are Chipotle Mayo or course ground mustard.


Almond Fajita Pizza

Ingredients:

  • 1 each prebaked pizza crust, 12"
  • 1 1/4 cups pizza sauce
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon cilantro, fresh, minced
  • 1 teaspoon horseradish, prepared
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper, black
  • 4 ounces HORMEL® MASTERPIECES™ Roasted Chicken Strips
  • 1/4 cup whole kernel corn
  • 1 1/2 tablespoons diced green chiles
  • 1/4 cup onion, yellow, minced
  • 2 tablespoons red bell pepper, diced
  • 2 tablespoons green bell pepper, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/4 cup almonds, slivered

Directions:
1. Mix together the lime juice, oil, cilantro, salt and pepper in a bowl. 2. Add chicken topping, corn, chiles, onion and peppers, mixing to coat with lime juice mixture. 3. Marinate for at least one hour. 4. Drain chicken mixture. 5. Spread pizza sauce over crust, spread chicken mixture evenly over the top, sprinkle the cheeses and almonds over the top. 6.Bake and serve. Servings: 4


BBQ Pizza

Ingredients:

  • 1 Prebaked 12”
  • 1 cup barbecue sauce
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup onion, red, cut into strips
  • 6 ounces AUSTIN BLUES® BBQ Pulled Pork
  • 1 tablespoon cilantro, fresh, chopped

Directions
1. Spread barbecue sauce evenly on pizza crust. 2. Sprinkle with cheese, onions, and half the chopped cilantro. 3. Spread pulled pork evenly over the top. 4. Bake at 400°F for 10 - 15 minutes, or until cheese is completely melted. 5. Garnish with remaining cilantro, and serve.


Dry Sausage Kabobs

Ingredients:

  • 6 slices DI LUSSO® Hot Ham Capocollo
  • 6 slices DI LUSSO® Deli Hard Salami
  • 6 slices DI LUSSO® Deli Pepperoni
  • 8 ounces assorted cheese (cheddar co-jack or blue cheese)
  • 1 English cucumber, sliced
  • 1 bunch red grapes
  • red pearl onions
  • heirloom tomato, sliced


Directions
Skewer folded thin slices of Capocollo, hard salami, and pepperoni (Use bamboo skewers) Add 1-inch square of cheddar co-jack or blue cheese to each skewer Along with sliced English cucumber, red grapes, red pearl onions, sliced heirloom or regular tomatoes. Sprinkle of skewer basil leaves, thyme sprigs, or rosemary on skewers. Using baked and cooled puff pastry shells as ramekins; fill each ramekin with sauces for dipping. Recommended sauces for these kabobs are chipotle Mayonnaise, course ground mustard, sweet Vidalia Onion sauce, and Dill Yogurt sauce.
